Tortiglioni with Artichokes & Capers

Serves 2


•Tortiglioni (enough for 2)
•1 can chopped tomatoes (400g) •3 cloves of garlic, minced
•1 medium onion, chopped
•3 tbsp. capers
•1 handful dried tomatoes, chopped •1 tsp. oregano
•1 ½ tsp. pepper
•1 handful fresh basil, chopped •1 cup marinated artichokes •½ cup saved pasta water
•Toppings: toasted pine nuts / walnuts, vegan parmesan


•Cook pasta according to package instructions
•In a big pan heat 2 tbsp. Oil or water over medium heat. Add onion and cook for about 3-4 minutes or until onion becomes translucent
•Add garlic and dried tomatoes and cook for another 2 minutes
•Add chopped tomatoes, mix well and bring sauce to a boil
•Add artichokes, pepper, basil, oregano and capers and cook for 5-7 minutes on medium-low heat
•Drain pasta and save ½ cup of pasta water and add it to the sauce with drained tortiglioni
•Mix well and serve with toasted pine nuts / walnuts and vegan parmesan
