Cheesy White Bean Paste / Quesadillas

Cheesy White Bean Paste
Enough for 3 quesadillas

Ingredients:

•1 small (70g) carrot, peeled and sliced
•2 tbsp. tomato paste
•1 tsp. paprika
•1/2 tsp. garlic powder
•4 tbsp. nutritional yeast
•800g Can white beans, rinsed and drained
•Salt and pepper to taste

Directions:

•Add carrot slices to a small pot. Cover with water and cook for about 10 minutes or until soft. Drain and add to a bowl along with all the other ingredients. Mash with a potato masher or blend mixture in a food processor
•Spread mixture on 6 tortillas
• preheat a non stick pan over medium heat and add one tortilla
•Add some cooked vegetables (I like to use bell peppers, onion, kidney beans and corn), mashed avocado and another tortilla on top (side with bean paste facing down)
•Cook for 2-3 minutes, then flip over and cook for another 2 minutes
•ENJOY!!

  1. This is the second recipe I have tried from this blog. I made this one with my boyfriend who, for the record, doesn’t like quesadillas. The ENTIRE dinner all he could talk about was how this was exactly what he wanted and how amazing it was. He rated it 10/10! It was seriously such a tasty quesadilla with lots of flavor. We added the cooked veggies that were suggested, with the avocado too, and it was seriously so delicious. It was filling and very flavorful and so easy! My boyfriend stuffed himself silly because he just didn’t want to stop eating it. I can’t wait to have the leftovers for dinner tonight!! Yum! The only thing I would like to add (not to the quesadilla that was perfect) is maybe some additional pictures? I like seeing the steps laid out in pictures to make sure mine is coming out the same. It’s not a big deal. Just personal preference.
