Tomato Sauce made out of Fresh Tomatoes

Ingredients
- Olive oil
- 4-5 tomatoes, finely chopped (I like to use beefsteak-tomatoes because they’re rather big. If you use other tomatoes like roma tomatoes make sure to use one or two more to get the same amount of sauce)
- 1 white onion diced
- 4 cloves of garlic minced
- 3 tbsp. tomato paste
- 3/4 cup of water
- 1 handful of fresh oregano or ca. 2 tbsp. dried oregano
- The needles of 2 sprigs of fresh rosemary finely chopped
- 1 tbsp. dried basil
- 2 tsp. sugar
- Salt and pepper to taste
Directions

To a pan or a pot, add enough olive oil to cover the bottom of the pan or pot. Heat the olive oil over medium heat

Once the oil is hot, add the finely chopped onion. Cook it for about 2 minutes or until translucent, then add the minced garlic and cook everything for another minute (make sure not to brown the garlic)

Add the tomato paste, all of your chopped tomatoes, the finely chopped rosemary, half of your fresh oregano leaves, the dried basil, sugar and 3/4 cup of water

Give everything a good stir, reduce heat to low and let the sauce cook for about 8-10 minutes

After 8-10 minutes, remove your pan / pot from the heat and start blending your sauce with a hend held / immersion blender until there are no tomato skins left

Note: When you chop the tomatoes in a food processor at the beginning there will most likely be no tomato skins in your sauce. Then, you don’t have to blend it

Return pan/pot to heat

Add 2 more tablespoons of olive oil and the rest of your oregano leaves to the sauce

Season it with salt and pepper and let it cook for 2 more minutes

Serve the sauce with your favorite pasta and Enjoy!
