The easiest tomato sauce ever
Ingredients
- 400-500g of your favorite pasta
- Olive oil
- 3 cloves of garlic, minced
- 2 small chillies, finely sliced
- 350g cherry tomatoes, roughly chopped
- Hot pasta water
- A big handful of fresh basil leaves
- Salt and pepper to taste
Directions

Bring a pot with water to a boil and cook your pasta according to the package instructions

While the pasta is cooking, heat olive oil in a big pan over medium-high heat. Add enough olive oil to cover the bottom of the pan

Once the olive oil is hot, add the minced garlic and the finely sliced chillies. Cook them for 1 minute

After 1 minute, add the cherry tomatoes and cook everything for another minute or until the cherry tomatoes begin to soften

Add 2 1/2 – 3 cups of hot pasta water to the pan and give everything a good stir

Cook the sauce for about 2 minutes

Add a big handful of basil leaves to the sauce and season it with some salt and pepper. Stir well

Mix in your cooked and drained pasta

Add another 1-2 tablespoons of olive oil to the pasta and season it with more salt and pepper if needed

Once you’ve made this a few times you can add other simple ingredients, such as baby spinach, chopped rocket leaves, or fresh or frozen peas, to your basic tomato sauce to completely transform it. It’s important to season the cooking water so that the pasta can absorb it as it cooks. Reserving and adding a splash of pasta cooking water to your sauce helps to loosen it, if it’s a bit thick.
