Curry Soup with Wontons

Serves 2-3 people

Ingredients

  • 2 tbsp. sesame oil
  • 1 small onion chopped
  • 2 cm long piece of ginger peeled and minced
  • 2 cloves of garlic minced
  • 1/2 head of a small green cabbage sliced
  • Vegetable broth
  • 2-3 tbsp. curry powder
  • 1 tbsp. coriander powder
  • 1 tsp. chili
  • Juice of 1 lime
  • 1 can 400ml coconut milk
  • 125 g quick-to-cook noodles like rice or ramen noodles
  • ca. 10 fresh Wontons
  • Salt to taste

Directions

  1. Heat 2 tbsp. of sesame oil in a pot over medium heat
  2. Add the onion and ginger and cook for about 2 minutes
  3. Then, add the garlic and sliced cabbage and cook for another 2-3 minutes
  4. Add enough vegetable broth to cover all the veggies by 2 cm
  5. Give everything a good stir, cover pot with a lid, reduce heat to medium-low and let the soup simmer for about 10 minutes

  6. Then, add the curry powder (start with 2 tbsp), coriander powder, chili powder,the juice of 1 lime and the coconut milk

  7. Bring everything to a boil
  8. Add your noodles and let them cook in the soup for 2 minutes, before adding your wontons

  9. Cook everything for another 2 minutes
  10. Season with salt and more curry powder if needed

  1. The soup is delicious and amazing. Its filling and has a restaurant quality flavor. I am not vegan or vegetarian so I used frozen pork dumplings and chicken broth. I also added carrots and subbed cabbage for spinach.
    I would also recommend using a low sodium broth with this soup.

    I will definitely make it again it was delicious
