Curry Soup with Wontons
Serves 2-3 people
Ingredients
- 2 tbsp. sesame oil
- 1 small onion chopped
- 2 cm long piece of ginger peeled and minced
- 2 cloves of garlic minced
- 1/2 head of a small green cabbage sliced
- Vegetable broth
- 2-3 tbsp. curry powder
- 1 tbsp. coriander powder
- 1 tsp. chili
- Juice of 1 lime
- 1 can 400ml coconut milk
- 125 g quick-to-cook noodles like rice or ramen noodles
- ca. 10 fresh Wontons
- Salt to taste
Directions

Heat 2 tbsp. of sesame oil in a pot over medium heat

Add the onion and ginger and cook for about 2 minutes

Then, add the garlic and sliced cabbage and cook for another 2-3 minutes

Add enough vegetable broth to cover all the veggies by 2 cm

Give everything a good stir, cover pot with a lid, reduce heat to medium-low and let the soup simmer for about 10 minutes

Then, add the curry powder (start with 2 tbsp), coriander powder, chili powder,the juice of 1 lime and the coconut milk

Bring everything to a boil

Add your noodles and let them cook in the soup for 2 minutes, before adding your wontons

Cook everything for another 2 minutes

Season with salt and more curry powder if needed

The soup is delicious and amazing. Its filling and has a restaurant quality flavor. I am not vegan or vegetarian so I used frozen pork dumplings and chicken broth. I also added carrots and subbed cabbage for spinach.
I would also recommend using a low sodium broth with this soup.
I will definitely make it again it was delicious
