Spicy Lentil Bolognese
Serves 4
Ingredients
- 200 g lentils
- 2-3 tbsp. olive oil
- 2 medium onion chopped
- 2 carrots peeled and diced
- 2 garlic cloves minced
- 200 ml red wine
- 1 can 500g chopped tomatoes
- 1/2 can water
- 4 tbsp. tomato paste
- 2 bay leaves
- 1 tsp. chili powder
- 1 1/2 tbsp. dried oregano
- ½ handful basil chopped
- 2 tbsp. finely chopped rosemary
- 1 handful parsley chopped
- Salt and pepper to taste
- 2 small chilis, sliced
Directions

In a large pot, heat olive oil over medium heat. Add chopped onions and carrots and sauté them for about 5 minutes or until the carrots begin to soften

Add minced garlic and lentils. Mix well. Add a bit more olive oil if needed

Deglaze everything with red wine and let that cook for ca. 2-3 minutes

Now add a can of chopped tomatoes, water, tomato paste, bay leaves, chili powder, oregano, basil and rosemary

Reduce heat to low, cover pot with a lid and let everything simmer for about 20-30 minutes, stirring occasionally

Add parsley, season with salt and pepper to taste and mix everything with your favorite pasta

Serve with sliced chilis and enjoy!
