Spicy Lentil Bolognese

Spicy Lentil Bolognese

Serves 4

Ingredients

  • 200 g lentils
  • 2-3 tbsp. olive oil
  • 2 medium onion chopped
  • 2 carrots peeled and diced
  • 2 garlic cloves minced
  • 200 ml red wine
  • 1 can 500g chopped tomatoes
  • 1/2 can water
  • 4 tbsp. tomato paste
  • 2 bay leaves
  • 1 tsp. chili powder
  • 1 1/2 tbsp. dried oregano
  • ½ handful basil chopped
  • 2 tbsp. finely chopped rosemary
  • 1 handful parsley chopped
  • Salt and pepper to taste
  • 2 small chilis, sliced

Directions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and carrots and sauté them for about 5 minutes or until the carrots begin to soften
  2. Add minced garlic and lentils. Mix well. Add a bit more olive oil if needed
  3. Deglaze everything with red wine and let that cook for ca. 2-3 minutes
  4. Now add a can of chopped tomatoes, water, tomato paste, bay leaves, chili powder, oregano, basil and rosemary

  5. Reduce heat to low, cover pot with a lid and let everything simmer for about 20-30 minutes, stirring occasionally
  6. Add parsley, season with salt and pepper to taste and mix everything with your favorite pasta
  7. Serve with sliced chilis and enjoy!
