Ingredients:
•1 can chopped tomatoes
•1 onion, chopped
•2 cloves of garlic, minced
•200ml soy cream
•2 tbsp. herbs of Provence
•ca 130g (1 cup) marinated artichokes •2 tbsp. capers
•ca. 130g (1 cup) black olives, pitted, halved
•salt and pepper to taste
Directions:
•Heat 2 tbsp. olive oil in a saucepan over medium heat. Add onion and minced garlic and cook until onion turns translucent
•Add all the other ingredients and season with salt and pepper
•Let sauce simmer for about 5-8 minutes over low heat
•Mix in cooked noodles
