Sweet Potato Cakes

4 Patties


•200g sweet potatoes, peeled and cubed
•100g potatoes, peeled and cubed
•1/2 medium onion, chopped
•4 tbsp. chickpeas
•1 tbsp. + 4 tbsp. breadcrumbs
•1 tbsp. cornstarch
•2 tbsp. sesame seeds
•1 tsp. paprika
•1/2 tsp. cumin
•3 tbsp. parsley, chopped
•salt and pepper to taste


•Heat a saucepan with water over high heat and bring to a boil. Cook sweet potatoes and potatoes for about 15-20 minutes or until soft
•Add cooked sweet potatoes, potatoes, onion, chickpeas, 1 tbsp. breadcrumbs, cornstarch, paprika, cumin, parsley and salt and pepper to a blender and pulse a few times to mix (don’t over mix)
•Add 4 tbsp. breadcrumbs and sesame seeds to a plate
•Preheat a pan over medium heat. Add some vegetable oil
•Form 4 patties with wet hands (the mixture is very soft) and cover each patty with breadcrumbs mixture
•Cook patties for about 5-7 minutes on each side. Use a small spatula and flip carefully
