Broccoli-Lemon Pasta


•Pasta (enough for 2)
•Juice of 1 big lemon
•3 1/2 cups broccoli florets (basically 1 head)
•2 1/2 tbsp. vegan butter or margarine
•2 tbsp. olive oil
•3 cloves of garlic, minced
•1 tsp. paprika
•Salt and Pepper to taste
Optional: sliced almonds to garnish


•Cook Pasta according to package instructions, rinse and set aside
•Meanwhile steam broccoli florets in a steaming basket for about 6-7 minutes
•Heat vegan butter and olive oil in a small saucepan over low-medium heat until soft. Add minced garlic and cook for about 2 minutes [don’t burn the garlic] Remove from heat and add lemon juice
•In a big pot combine pasta, broccoli, butter-lemon sauce and paprika •Season with salt and pepper and (optional) serve with sliced almonds
