Mushroom & Onion Cream Subs

For 6 Subs:
Ingredients:

•250g mushrooms, sliced
•1 medium onion, sliced
•2 cloves of garlic, minced
•1 tbsp. soy sauce
•1 tsp. dried thyme
•Pinch of pepper
Cream:
•1 can (400g) chickpeas
•4 tbsp. vegan mayo
•2 tbsp. mustard
•Juice of ½ lemon
•2-3 tbsp. dill, chopped
•Optional: asparagus, salad etc.

Directions:

•Heat 1-2 tbsp. oil in a pan over medium heat. Add onion and cook for about 2 minutes or until translucent. Add garlic and cook for another 1-2 minutes. Transfer to a plate
•Add 2-3 tbsp. water and mushroom slices. Cook 2 minutes, then add soy sauce, thyme and pepper. Cook for about 3-4 minutes or until mushrooms are soft. Add onion slices and garlic. Stir well and remove from heat
•For the chickpea cream, mash chickpeas with a fork in a bowl and add all the other ingredients. Mix well
•Add (optional) salad or asparagus, mushroom & onion mixture and cream to your sandwich
