Makes 12


•400g (3 1/3 cups) all-purpose flour
•500ml (2 1/8 cups) plant based milk
•4 tbsp. sugar
•1 tsp. vanilla extract
•2 tbsp. applesauce
•1 tbsp. apple cider vinegar
•15g (2 ½ tbsp.) baking powder
•Optional: a pinch of cinnamon


•In a large bowl mix together dry ingredients (flour, sugar, baking powder, cinnamon). Then add wet ingredients (plant based milk, vanilla extract, apple sauce, apple cider vinegar) and mix until smooth (best with a whisk)
•Heat a lightly oiled non-stick frying pan over medium heat. Pour or scoop the batter onto the pan, using approximately 3/4 cup for each pancake. Brown on both sides and serve hot
