Chickpea-Couscous Patties with Avocado Mayo

Ingredients:

Chickpea Patties (10 patties):

•1 can chickpeas (400g)
•1 tbsp. aquafaba (chickpea liquid)
•1 small carrot (3/4 cup), peeled and chopped •1 small onion, chopped
•½ cup fresh parsley, chopped
•1 tsp. curry powder
•1 tsp. paprika
•1 ¼ cup cooked couscous / bulgur / quinoa (1 ¼ cup is usually the amount you get from ½ cup dried couscous cooked with 1 cup water)
•½ cup whole wheat flour
•¾ – 1 cup oats
•½ tsp. salt
•½ tsp. pepper
•Optional: breadcrumbs or panko

Directions:

•Drain can of chickpeas, reserving 1 tbsp. aquafaba. Add chickpeas and aquafaba to a blender along with carrot, onion, parsley, curry powder and paprika. Blend until mixture is well combined
•Transfer mixture to a bowl and add cooked couscous, whole wheat flour, oats & salt and pepper
•Mix until well combined and form ca. 10 patties out of the mixture •Optional: Coat both sides of the patties with breadcrumbs or panko
•Heat 2 tbsp. olive oil in a non-stick pan over medium heat. Cook patties for ca. 5 min per side or until golden brown

Super easy Avocado Mayo:

Ingredients:

•½ avocado
•4 tbsp. vegan mayonnaise
•Salt and pepper to taste •2 tbsp. fresh parsley, chopped
•Optional: 2 tbsp. Hot Sauce

Directions:
•In a bowl mash avocado and combine with other ingredients . Store dip in the fridge until serving
