Serves 2
Ingredients:
•250g pasta
•1 cup peas
•1/2 avocado
•1/4 cup cashews, soaked in water
•1/4 cup nuts or seeds of your choice (e.g. walnuts, almonds, pine nuts etc.)
•1 handful basil
•1 handful parsley
•2 cloves of garlic
•1 cup plant based milk
•2 tbsp. hot sauce
•1 tbsp. balsamic vinegar
•4 tbsp. nutritional yeast
Directions:
•Cook pasta according to package instructions, drain and set aside
•Meanwhile add peas, avocado, cashews, nuts/seeds, basil, parsley, garlic and oat milk to a blender and blend until smooth
•Transfer pasta to a big bowl and add pesto. Mix in hot sauce, balsamic vinegar and nutritional yeast •Season with salt and pepper to taste and stir until well combined
