Super Simple Weeknight Tomato Sauce

Ingredients
- 4 cloves of garlic minced
- Olive oil
- 1 tsp. dried chili flakes
- 1 can 500g of chopped tomatoes
- 2 handful fresh basil leaves chopped
- Salt and pepper
- Optional: nutritional yeast or vegan parmesan for serving
- 1/2 cup (saved) pasta water
Directions

Add the minced garlic to a small bowl along with a few tablespoons of olive oil (3-4 tbsp). Let that sit for about 20 minutes

Cook your pasta according to the package instructions

Heat a pan over medium-high heat

Add the garlic-oil and the dried chili flakes. Cook that for 1 minute, make sure the garlic and the chili flakes don’t burn (otherwise they’ll taste bitter)!

Add the can of chopped tomatoes and stir well

Bring the sauce to a boil

Reduce heat to low and season with salt and pepper. Add 1 1/2 handful of basil leaves

Cook the sauce for another minute, then, add the drained pasta and 1/2 cup of saved pasta water

Mix well and season with more salt and pepper if needed

Serve with leftover basil leaves, a drizzle of olive oil and some vegan cheese

This makes enough sauce for 500g (1 package) of pasta
