Super Simple Weeknight Tomato Sauce

Serves 4

Ingredients

  • 4 cloves of garlic minced
  • Olive oil
  • 1 tsp. dried chili flakes
  • 1 can 500g of chopped tomatoes
  • 2 handful fresh basil leaves chopped
  • Salt and pepper
  • Optional: nutritional yeast or vegan parmesan for serving
  • 1/2 cup (saved) pasta water

Directions

  1. Add the minced garlic to a small bowl along with a few tablespoons of olive oil (3-4 tbsp). Let that sit for about 20 minutes
  2. Cook your pasta according to the package instructions
  3. Heat a pan over medium-high heat
  4. Add the garlic-oil and the dried chili flakes. Cook that for 1 minute, make sure the garlic and the chili flakes don't burn (otherwise they'll taste bitter)!

  5. Add the can of chopped tomatoes and stir well
  6. Bring the sauce to a boil
  7. Reduce heat to low and season with salt and pepper. Add 1 1/2 handful of basil leaves
  8. Cook the sauce for another minute, then, add the drained pasta and 1/2 cup of saved pasta water
  9. Mix well and season with more salt and pepper if needed
  10.  Serve with leftover basil leaves, a drizzle of olive oil and some vegan cheese

  11. ENJOY!

Notes

This makes enough sauce for 500g (1 package) of pasta
