Artichoke Pesto with Avocado and Parsley

Ingredients

  • 1 jar ca.280g marinated artichokes, washed and drained (drained: ca. 150g)
  • 1 handful fresh parsley roughly chopped
  • 1 handful fresh basil leaves
  • Juice of 1/2 lemon
  • 2 cloves of garlic roughly chopped
  • 1/4 cup water
  • 1/4 cup olive oil
  • 1/4 avocado roughly chopped
  • Salt and pepper to taste

Directions

  1. Add all the ingredients to a high speed blender or a food processor and blend until smooth. Add salt and pepper to taste
  2. ENJOY
