Artichoke Pesto with Avocado and Parsley

Ingredients
- 1 jar ca.280g marinated artichokes, washed and drained (drained: ca. 150g)
- 1 handful fresh parsley roughly chopped
- 1 handful fresh basil leaves
- Juice of 1/2 lemon
- 2 cloves of garlic roughly chopped
- 1/4 cup water
- 1/4 cup olive oil
- 1/4 avocado roughly chopped
- Salt and pepper to taste

Add all the ingredients to a high speed blender or a food processor and blend until smooth. Add salt and pepper to taste
