Cheesy Pasta Sauce with Broccoli ( Nut Free )
Serves 4
Ingredients
- 500 g pasta
- 1 head of broccoli cut into florets
- salt and pepper to taste
Sauce:
- 5 small potatoes peeled and cubed
- 1 carrot peeled and sliced
- 1 medium onion peeled and sliced
- 2 cloves of garlic peeled and roughly chopped
- Vegetable broth
- 1/2 tbsp. mustard
- 2 small pickled chilli peppers
- Juice of 1/2 lemon
- 1 tbsp. potato starch
- 1/4 red pepper (for color) deseeded and chopped
- 4 tbsp. nutritional yeast
- ca. 1 cup dairy-free milk
Directions

Cook pasta according to package instructions. Add broccoli florets to the pot a few minutes before the pasta is done cooking

Cover pot with a lid and cook pasta and broccoli for about 2-3 minutes or until pasta is done

Drain and set aside

Meanwhile add potato cubes, carrot slices, onion slices and garlic to a small pot. Add vegetable broth until the vegetables are covered

Boil on medium-high heat for about 10 minutes or until the potato cubes and carrot slices are soft

Drain vegetables and add them to a high speed blender, along with all the other ingredients for the sauce

Blend until smooth. Add more dairy free milk to the sauce if you like and season with salt and pepper

Combine pasta, broccoli and cheese sauce in a big pot and (optionally) serve with nutritional yeast and fried onions
