Potato & Chickpea Patties
Ingredients
- 500 g potatoes peeled and cubed
- 1 small onion chopped
- 2 cloves of garlic sliced
- 1 can (400g) chickpeas,, drained (I like to remove the skin of the chickpeas as well)
- 1 1/2 tbsp. paprika
- 1/2 tsp. pepper
- 1/2 tbsp. vegetable broth powder
- 1/2 tbsp. dried oregano
- 1/2 tbsp. dried coriander
- 1 tbsp. soy sauce
- 1 1/2 cup oats
- 3/4 - 1 cup flour
- Salt to taste
- 3-4 tbsp. olive oil
Directions

Heat water in a pot over high heat. Add potato cubes and cook until soft. Then drain the potatoes

Meanwhile heat 1 tbsp. olive oil in a pan over medium heat. Add onion and cook until it begins to brown. Add garlic and cook for another 2 minutes

Remove pan from heat

Add drained chickpeas, onion and soft potatoes to a big bowl. Blend everything together with a hand blender until everything is well combined and no chunks remain

Add remaining ingredients and mix with a spoon or your hands. You may have to add in more flour if your mixture is too wet. The texture should be formable and not too wet

Season with salt to taste

Form ca. 6-8 patties out of the mixture

Heat 2-3 tbsp. olive oil in a pan over medium heat. Add patties and cook for ca 3-4 minutes on each side

Notes
You can easily freeze the patties. Simply wrap each patty in plastic foil or put them in a freezer-save container
