Easy Basic Tomato Sauce
Serves 2
Ingredients
- Olive oil
- 1 medium onion chopped
- 4 cloves of garlic minced
- 250g cherry tomatoes halved
- 1 tbsp. dried basil
- 1 tbsp. dried oregano
- 1 sprig of rosemary finely chopped
- 3 tbsp. tomato paste
- 1 can (400g) plum tomatoes
- 1 tsp. sugar
- salt and pepper to taste
- A few tablespoons of pasta water
- Optional: fresh basil, pine nuts or other nuts and seeds
Directions

Heat olive oil (enough to cover the bottom of the saucepan) in a saucepan over medium heat

Add onion and cook it for about 2-3 minutes or until onion becomes translucent

Add the cherry tomatoes and cook everything for another 3 minutes. Try to pop the cherry tomatoes with a wooden spoon. Add your garlic

After another minute, add all the other ingredients (except basil and pine nuts) and stir well

Bring sauce to a boil, reduce heat to low and cook for 4-5 minutes

Add a few tablespoons of pasta water and add your pasta to the sauce, mix well, add more salt and pepper if nedded and serve with fresh basil and pine nuts

Enough for ca. 350g (makes two big portions) of your favorite pasta
