Red Pesto

(4 portions)


•100g marinated sun-dried tomatoes, drained (save the oil)
•50g oil (from the sun-dried tomatoes)
•2 cloves of garlic
•2 tbsp. nutritional yeast
•40g tomato paste
•2 tbsp. balsamic vinegar
•3 tbsp. pine nuts
•pepper (I like to use 1/2 tsp)


•In a food processor or blender, blend together sun-dried tomatoes, garlic, oil, nutritional yeast, tomato paste, balsamic vinegar and pine nuts
•Add pepper to taste
