Easy Peanut Stir Fry
Serves 2
Ingredients:
•pasta, enough for two (250-300g)
•2 tbsp. vegetable oil (preferable sesame oil)
•vegetables for two, chopped ( I like to use: 1 zucchini, 2 red bell peppers, 1 onion, 2 handful broccoli florets)
•1 tbsp. curry paste
•1 tbsp. + 2 tbsp. soy sauce
•1 can coconut milk (400ml)
•1/3 can water
•Juice of ½ lemon
•2-3 tbsp. peanut butter
•Ca. 200g fried vegan „chicken“ strips (store bought) or basically any plant-based meat replacement you like for example fried tofu, tempeh etc.
•Optional: 1 tbsp. sesame seeds
Directions:
•Bring a pot with water to a boil and cook pasta according to package instructions
•Meanwhile heat 2 tbsp. oil in a non-stick pan over medium heat
•Add vegetables and cook for about 3-4 minutes
•Add 1 tbsp. soy sauce and curry paste, cook for 2 minutes
•In a bowl, mix together coconut milk, water, lemon juice and peanut butter and add sauce to the vegetables. Stir well
•Cook for another 4-5 minutes on medium-low heat until sauce is hot
•Add in cooked and drained pasta and fried chicken strips or tofu
•Serve with sesame seeds
