Vegan Bacon // BLT

Ingredients:

•1 large carrot
•1/2 tsp. liquid smoke or smoke powder
•1 tbsp. maple syrup
•1/2 tsp. paprika
•1 tbsp. tamari or soy sauce
•1 tbsp. vegetable oil

Directions:

•Preheat your oven to 180°C (360°F) and line a baking sheet with parchment paper
•Peel carrot and slice it into thin strips (best with a peeler or a mandoline)
•Transfer carrot strips to a bowl and add the other ingredients. Stir well so that all of the carrot slices are coated
•You can marinate the strips for about 30 minutes for a more intense flavor if you like
•Place the carrot strips side by side on the prepared baking sheet and bake for 10 minutes. Watch them carefully as they finish cooking because they can burn easily
•Add carrot bacon to your sandwich, along with vegan mayo, tomato slices, lettuce (I like to use spinach) and red onions
