Serves 2
Ingredients:
•250g pasta
•2 bell peppers, thinly sliced
•1 small onion, sliced
•1 can (400ml) crushed tomatoes
•3 tbsp. tomato paste
•1/2 cup plant based milk
•Handful fresh parsley, chopped
•1/2 lime, juice
•2 tbsp. hot sauce
•Fajita Seasoning Mix: 1 tbsp. paprika, 1/2 tbsp. cornstarch, 1/2 tsp. chili, 1/2 tsp. sugar, 1/2 tsp. cumin, 1/2 tsp. garlic powder, 1/2 tsp. onion powder
•Salt and pepper to taste
Directions:
•Cook pasta according to package instructions, rinse and set aside
•Heat some tablespoons of water in a large non stick pan or in a wok over medium heat. Add bell pepper and onion slices and cook for about 5 minutes. Reduce heat to medium-low
•Add tomato paste, crushed tomatoes, fajita mix, plant based milk and hot sauce. Cook for 10 minutes or until bell peppers are soft and sauce has reduced by 1/3
•Add pasta and season with salt and pepper, lime juice and parsley
