Serves 2-3
Ingredients:
-8 medium potatoes
Bean Mixture:
-1 can kidney or black beans
-3 tbsp ketchup ( or tomato paste)
-1 tbsp. taco seasoning
-2 tbsp. paprika
-1/2 cup water
-1 medium onion, cubed
-2 cloves garlic, thinly sliced
+ Toppings of your choice (I used corn, lettuce, tomatoes, guacamole & sunflower seeds)
Directions:
Preheat the oven to 180°C (350°F). Wash the potatoes, and pierce the skin several times with a knife or fork. Place potatoes in the preheated oven and bake for 60 minutes or until slightly soft and golden brown
For the bean mixture add all the ingredients to a non-stick pan and cook for about 10 minutes over medium heat. Mash the beans with a fork for a chunky texture. Season with salt and pepper to taste. Slice each potato down the center and fill it with the bean mixture. Add toppings of your choice
