Creamy Chocolate Chia Seed Pudding

Serves 2


-1/4 cup chia seeds
-1 1/4 cup nondairy milk
-2 tbsp. raw cacao nibs
-1 tbsp. raw cacao powder
-1/2 tsp. vanilla extract
-4 dates (or 4 tbsp. agave nectar/maple syrup)
-Pinch of salt
-Optional: 1/4 tsp. cinnamon


•Combine all of the ingredients in a blender and blend on high speed until very smooth
•You may need to scrape down the sides of your blender once or twice to make sure all ingredients are well blended into the pudding
•Taste for sweetness and add extra agave nectar / dates if desired
•Pour the pudding into two jars and place in the fridge to set until thoroughly chilled, at least 4 hours
•Serve cold
