Serves 2
Ingredients:
•pasta of your choice (enough for 2)
•1 can coconut milk (400g)
•100 ml water
•1-2 tbsp. Curry paste (depends how spicy you want it to be)
•2 cm ginger, minced
•2 cloves of garlic, minced
•3 tbsp. Tomato paste
•veggies of your choice (I used: 2 Bell peppers, 200g mushrooms, 2 handful green beans, 1 onion)
•2 tbsp. Soy sauce
•1 tsp. Brown sugar
•juice of 1 lemon or lime
Directions:
•cook noodles according to package instructions •meanwhile heat 2 tbsp. Oil or water in a wok or pan over medium heat
•add ginger and garlic and cook for 2 minutes
•Add veggies of your choice (add the ones that take longer to cook first and let them cook for 2-3 minutes before adding other veggies – I added Bell peppers and onions first and then 3 minutes later beans and mushrooms)
•add coconut milk, curry paste, tomato paste, water, sugar and soy sauce and stir well
•Cook on low heat for 5-7 minutes
•mix sauce with noodles, add lemon/lime juice and ENJOY!
