Makes 10-12
Ingredients:
•400g (3 1/3 cups) all-purpose flour
•500ml (2 1/8 cups) plant based milk
•4 tbsp. sugar
•1 tsp. vanilla extract
•2 tbsp. applesauce (or 2 chia seed or flax seed “eggs”)
•1 tbsp. apple cider vinegar
•15g (2 ½ tbsp.) baking powder
•1/2 tsp. baking soda •Optional: a pinch of cinnamon
Directions:
•In a large bowl mix together dry ingredients (flour, sugar, baking powder, baking soda,cinnamon). Then add wet ingredients (plant based milk, vanilla extract, apple sauce, apple cider vinegar) and mix until smooth (best with a whisk)
•Heat a lightly oiled non-stick frying pan over medium heat. Pour or scoop the batter onto the pan, using approximately 3/4 cup for each pancake. Brown on both sides and serve hot
