Pasta with a creamy Tahini-Tomato Sauce

Serves 4

Ingredients:
•500g pasta
•3 cloves of garlic, minced
•250g cherry tomatoes, halved
•1 tbsp. herbes de Provence
•5 tbsp. Tahini (+more for serving)
•1 can (400g) chopped tomatoes
•3/4 can water
•ca. 300g sweetcorn (from can)
•2 handful fresh Basil leaves
•2-3 handful arugula
•Salt & pepper to taste

Directions:
•Cook pasta according to package instructions
•Meanwhile heat 2 tbsp. water or oil in a pot over medium heat
•Add garlic and cherry tomatoes and cover pot with a lid. Cook for 4-5 minutes or until cherry tomatoes are soft
•Add chopped tomatoes, water, tahini, basil & herbes de provence. Stir well and cook for 5 minutes
•Add all the other ingredients (arugula & corn) and season with salt and pepper
•Cook for another 5 minutes
•Mix sauce with drained pasta and serve with more tahini drizzled over the pasta
